Raw Foods Recipe – Spirulina Pie

Crust:

2 cups raw almonds (we used a combination of raw cashews and Brazil nuts) – finely ground in a food processor

1/3 cup raw agave nectar

 

Filling:

3/4 cup Thai coconut water

1/4 cup raw cashews

1/4 cup coconut butter (sometimes called coconut oil)

1/3 cup agave nectar

2 tablespoons spirulina

1 tablespoon carob powder

 

To make the crust:

In a mixing bowl, combine the ground almonds and agave nectar, and mix well.  Press the mixture evenly into the bottom and sides of a 5-inch pie tin.

To make the filling:

In a blender combine all of the filling ingredients and blend until smooth.  Pour the mixture into the pie crust and freeze for no less than 1 hour before serving

 

Note: all of the necessary ingredients, including powdered spirulina, can be found in most health food stores.
